Chef Spotlight – Jean-Marc Martin brings two decades of experience to ACAC
Swiss chef Jean-Marc Martin’s hospitality career began with an apprenticeship. That was in 1966. Mr. Martin then pursued formal education in the culinary arts. In 1999, he graduated with a CAP Cuisine (Certificat D’Aptitude Professionnelle) in Switzerland.
A Five-Star Career
After graduation, Mr. Martin’s career grew. He worked in renowned restaurants and 5-star hotels, including the famous Baur Au Lac in Zurich, Switzerland and Hôtel Kulm in St. Moritz. Over the years, he acquired impressive culinary skills. Because of his experience and expertise, he was hired as the assistant to the culinary instructor at L’Ecole Hôtellière de Lausanne in 1980. From there, Chef Martin went on to work for one of the world’s most famous hospitality schools, Les Roches International School of Hotel Management in Switzerland, where he stayed for 23 years.
Global Culinary Perspective
Two decades of work later, Chef Martin moved to Amman, Jordan in the Middle East to work as a kitchen lecturer at the Royal Academy of Culinary Arts. In 2017, Jean-Marc Martin joined the ACAC to train young Cambodian students in the highest standards of culinary arts.
