The management of ACAC is selecting its staff and faculty through a transparent hiring process, to ensure employment is based on documented and referred experience and subject matter knowledge. They are further trained by senior managers of the academy, prior to commencing work. ACAC will ensure a continuous training program for all staff, to keep abreast in the field of culinary arts, trends and teaching methodologies
Dean of Academy
Mr. Kalberer has over 30 years of experience in five- star hotels, 10 of them as an Executive Chef in hotels around the world including Switzerland, Hong Kong, The Philippines, Malaysia and Australia. The last several years of his career steered him to the educational field where he was a Culinary Instructor in Les Roches International School of Hotel Management in Bluche, Switzerland. In 2008 he earned a MasterChef degree from Switzerland. After being the Culinary Program Manager at RACA for 6 years, he was promoted to Campus Director of the Royal Academy of Culinary Arts. In March 2016 he took on the assignment of the Dean of the Academy of Culinary Arts Cambodia to head the new project and open the first International accredited Culinary Academy in Cambodia.
Chef Matang graduated From the Paul de Brule School in 2003 and worked for past 15 years in in well-known Hotels nationally and internationally such as the Jumeirah Hotel in Dubai. Along others Chef Matang developed his skill in combining ancient Royal Khmer cuisine with modern Asian fusion cooking and Western Cuisine. Prior to his assignment at the Academy of Culinary Arts, Chef Matang has been a Culinary Arts Teacher at the Ecole Paul de Brule in Siam Reap for the past 2 years.
